I think I have found my new favorite panini. Thank you to Bon Appetitte magazine for the idea. It starts with one of Mouse's favorite cheeses, Brie. OK, really it starts with bacon but we're a cheese family bacon is just a side item for us.
For the first sandwich we left it as just bacon and brie. The second style had the same beginning in ingredients then the addition of apples.
But the secret ingredient was Fig Jam. It took a while to find it, but it was worth it. It completes the flavors of the panini.
We've also had this spread on crackers with a meat and cheese tray. It is so good. We found it a specialty boutique but I have seen it had specialty grocery stores also.
Ingredients:
Sliced bread
Bacon (cooked)
Brie (sliced thin)
Granny Smith Apples (sliced thin)
Fig Jam
Butter
To Make: Butter bread and pre-heat a non-stick skillet. Place bread butter side down on skillet, then added Fig Jam, and layer cheese bacon and apples then top with other slice butter side up. Heat up till golden then flip. Serve warm.
Go now and enjoy.
