Mouse is a huge cauliflower fan, so I am always looking for new recipes that she will like. This one was pretty good. We added the turkey meatballs for Steve has still isn't quite on board with a vegetarian diet.
This recipe I modified from PowerFoods cookbook.
Ingredients:
1 cauliflower
2 tsp olive oil
4 or 5 sweet peppers roughly chopped
1 onion chopped
1/2 pint of cherry tomatoes
garlic minced (to taste)
1 can of Great Northern beans
1 cup V8 juice
1/2 cup Basil chopped
2 Tbsp balsamic vinegar
2 oz Parmesan Cheese
Turkey meatballs
Prep Grill
Cut cauliflower into quarters, brush with olive oil and sprinkle with salt and pepper. Place cauliflower on grill with direct heat. I like it crispy so we kept them on the for the full 35 minutes.
Meanwhile combine peppers, onion and toss with olive oil sauté in pan till soft. Once soft add the white beans and tomatoes until the tomatoes split.
Then add the V8 juice, vinegar and basil cook until heated through.
In a separate pan I cooked the meatballs until heated through.
Plate and top with cheese.
